The Cabinet: Crème de Cassis

~ CRÈME DE CASSIS ~
Blackcurrant liqueur, traditionally made in Burgundy, France. c.25% ABV £10-20 for 700ml
Friends with: gin, tequila/mezcal, brandy, bourbon, vermouth, sherry. Lime cuts through it nicely, as does fresh mint. Cloves are a nice match too.
THERE is a bar in Côtes-d'Armor, Brittany, that hasn’t really changed in 100 years. It goes by the name Damour Colette, it’s only open on Friday and Saturday evenings, and there’s only room for about 20 people. You definitely have to reserve your space - and the proprietor, Colette, n’invite pas n’importe qui. That is not all. Each patron is only permitted to order two drinks and there are no two ways about it, the drink must be the Macka, since Colette doesn’t serve anything else. Choice is tyranny; hence democracies are tortured by regret.
