~ THE DAIQUIRI ~
50ml light rum
15ml lime juice
10ml raw cane sugar syrup (2 : 1)
Freeze you glass. Put all the liquids in the shaker. Fill halfway with ice. Shake about 32 times, i.e. quite a lot. Now fine-strain into an extremely cold glass. Lime garnish but it’s not essential.

1) This is the ‘base’ Daiquiri recipe. It’s the one I seek to perfect. If you’d like some variants, the links are below. If you want to get really geeky about ratios, I’ll see you below the lime. I mean line.
2) “Is that cocktail?” asked my Aubrey (4) when he saw me snapping the aforepictured. Yes, I replied. “It looks reallllly good,” he said. “Drink a lot of it!”
