Good to have you back after your holiday. Sounds like you were in the middle of nowhere up North but if you can get to a couple of pints of Landlord or Black Sheep you should be OK. And with a bottle of bourbon what more do you want?

Speaking of whiskey, I was in a bar in Yokohama and asked for a large Jack Daniels. The barman asked if I wanted the bottle, “Eh, no thanks, just a large one”. Strange question, I thought. Anyway, as I looked around the room, I noticed that all of the tables had groups of people sat around them with several bottles of booze on each table, but they all had tags on them. Behind the bar, in racks, were more bottles most with tags. What happens is when you buy a bottle of whisky or whatever, the barman puts your name on the bottle; when you’ve had enough you give it back to the barman and he keeps your bottle for you the next time you come in. I discovered that this practice is commonplace in Yokohama; not sure about other parts of Japan.

Neat idea. Never seen that anywhere else. I wonder if it would work in your bar?

Anyway, I have a question for you. When I was working in Latvia, I was gifted a couple of bottles of Melnais Balsam, about 45% proof, and have not known quite what to do with them. After a few years, they are still unopened. Have you any thoughts on the use of Malnais Balsam in cocktails?
