A bit late to the party as I've been away and have the pleasure of catching up. This was delicious and in the spirit of "The Spirits" (and not wanting to waste anything) I'm now trying a super-charged Jungle Bird with the leftover pineapple juice, coconut syrup and Navy strength dark rum.
On the couch one week into recuperating from a badly broken wrist and a sprained ankle, this recipe arrived in my email. Due to my current circumstances, you had my immediate attention with “painkiller.” Took a bit longer to make one-handed, but it was a hit in our house, and it lived up to its name for a little while at least. Opened a can of coconut milk just for this and have no regrets at all. It’s delicious! The coconut syrup feels like it would be amazing in a Mai Tai!!
